Freezing Drying



In freeze drying, food is first frozen rapidly under vacuum pressure. Them, it is heated carefully. The ice crystals in the food sublime to form vapour which is then removed. The dried food is packed in an inert gas like nitrogen in moisture proof containers.

   Freezing drying produces better quality dried foods, but the method and packaging are expensive.
